The gap between supply and demand in the market
Worldwide, two thirds of all economically significant fish stocks have been overfished or are endangered .
 
The caviar producing species of sturgeon are in their last natural refuges and threatened with extinction.
 
For this reason the United States has completely forbidden the import of Beluga Caviar as of September 2005 (more). The global export of caviar amounted to 2000 tons in 1977, in 1998 just 400 tons, and in the year 2001 only 85tons. From 1998 to 2004 the price per kilogram increased from 1,200.00 euro to 2,040.00 euro.
 
Demand continues to rise, however, and only sturgeon from the breeding facilities will be able to handle this adequately in the future. The business concept of the CAVIAR CREATOR Group is based upon this realistic business idea.
 
The supply of wild caught fish has sunken, world wide – simultaneously, the demand has risen.  The lack of supply on the world market is estimated at circa 30 million tons.
 
Gastronomes and gourmets are on the search for new products and creations, the offer of sturgeon and sturgeon delicacies meet this demand.
 
The ecological damage from meat and nutritional physiological reasons are additionally raising the demand for fish products .
